If you’re a busy Mum looking for QUICK lunches to help lose weight then this if for you. I’m not one for counting calories or uploading all of my information into my Fitness Pal, I don’t have the time to do that. I just want to eat something that’s quick and easy to prepare, healthy, stops me feeling hungry and gives me energy…..surely that’s not too much to ask.
Recent lunches have consisted to Falafel, hummus, fattoush & wholemeal pitta, which is a perfect combination to ensure I’m eating a balanced diet.
As I prepared the fattoush on Sunday it’s literally taken me no longer than 4 minutes to plate up my lunch every day. See below for the fattoush recipe
SERVES 2
½ yellow pepper, seeded and sliced
½ cucumber, chopped into large chunks
2 beef tomatoes
½ bunch spring onions, cut into small rings
1 tbsp fresh parsley, finely chopped
1 tbsp fresh mint, finely chopped
1 tbsp fresh coriander, finely chopped
Sea salt and freshly ground black pepper
The Dressing
1 clove garlic, pressed, Juice from 1 lemon, 1 tbsp olive oil -Mix all ingredients together and set aside
Place the pepper slices, cucumber and tomatoes in a large bowl, together with all the chopped fresh herbs and mix together will.
Pour the dressing over the salad and gently mix so that everything is evenly coated.
Obviously a little bit of chopping involved. However I usually make 6 portions or so in advance and then that lasts me the whole week………meaning I can eat healthily without having to think! perfect
